Right, so, extra melee weapons and extra attacks.

Okay, so Genestealers come with Rending Claws standard and can get Scything Talons for an upgrade.

That means, with an extra melee weapons, my Genestealers would get an extra attack? Correct?

So, in actual melee combat they'll have three attacks instead of two. How do I resolve the attacks when rolling the dice? Do the Rending Claws get two dice, and the Scything Talons get one?

And what about when I'm charging with them? What weapon gets the extra attack?

Related question: The Carnifex already has two sets of melee weapons standard. Is his extra melee attack already included in the base stat line? If I replace one of the Scything Talons with a Venom Cannon, does my Carnifex lose a melee attack? If he replaces both of his Talons with two long range weapons, does he lose all of his melee attacks?

Doesn't work that way in 40K.

Except for some very specific exceptions... (tail biomorphs, maybe tech marine arm, etc) all 40K attacks during the same phase are done with the same weapon. In this case the stealers have 2 attacks, plus 1 for having two pairs of weapons, plus 1 for charging. So 4 attacks. On your turn, you decide if the stealers are going to attack with their rending claws, or their scything talons. (you can decide on a per model basis, but each model can only choose one.)
So each model gets either 4 RC attacks, or 4 ST attacks. (Hint: Pick the RC... unless you are trying to let the enemy live longer.)

Missed second part...

No. Base stat line is just that, not wargear included. So a stock fex gets 4 attacks, plue an attack for 2 pairs of CC weapons. Yes, because then only 1 pair of CC weapons,so no extra attack. And yes, a single pair of STs on a fex is completely worthless.
No, the fex can still get his 4 base attacks, just no bonuses from CC weapons.

Hint: 95% of the time, you should be running the fexes with 2 TLdevs.

They get the extra attack and you chose which weapon to attack with (rending claws are better in every way so use them).

As for fexes, the bonus attack is not included in the profile so it gains an extra attack if it has two sets of scything talons. However, replacing one set with a gun will mean you don't gain the bonus attack. Since one set of scything talons does absolutely nothing on a carnifex (fexes attacks are AP2 already), most people simply take two sets of twin linked devourers with brainleech worms. This way it will still get its 3 attacks and have absolutely brutal shooting.

What did you mean by the Carnifexes attacks are already AP 2? Isn't AP dependent on weapon choice, not the 'Nid?

OK noob question from me also. What about fixed models like OOE and Deathleaper? We can't adjust their gear so are all their attacks included in their stats or do we still add one for them having two sets of stabby stabby?

You still get the bonuses. There are some instances where their wargear will be discounted, for instance by particular enemy special rules.

you have two weapons. You gain an additional attack in close combat. You can decide, which attacks you will hit while using one weapon, and which - while using another. Mix-and-match is totally possible.

rroach: Smash makes all MC attacks AP2, *plus* you can do a Smash Attack if you want to. You do not have to Smash Attack to get the AP2. (that has been misunderstood before, so just covering it)

Its base attacks are only 3, unfortunately. Obviously 4 with dual talons or talons and CC
